One can easily make an excellent, refreshing champagne out of the elderberry flowers:

Recipe for elderberry champagne
Put eight inflorescences into 4 l of water with 500 grams of sugar. Add four washed lemons (not peeled) and cut them into slices. Transfer the ingredients into a bowl and incubate for three to four days at room temperature, stirring it once a day.
